Light Club Sandwich - cooking recipe
Ingredients

1 None egg
3 slices sandwich bread
1 tsp Dijon mustard
2 leaves Iceberg lettuce, torn
2 inches cucumber, sliced
2 slices turkey breast
1 None tomato, sliced
None None watercress, to garnish
None None cherry tomatoes, halved, to garnish
Preparation

To hard boil the egg, place egg in a saucepan and cover with water. Bring water to a boil over medium heat. Once the water reaches a boil, remove from the heat. Let egg sit in hot water for 12 minutes, drain then run under cold water. Peel and slice.
Spread bottom slice of bread with mustard, top with 1/2 of lettuce, most of cucumber and turkey. Add 1 slice of bread, remaining lettuce, tomato and egg. Top with remaining bread and cut into quarters. Garnish with remaining cucumber, watercress and cherry tomatoes. Secure with cocktail skewers and serve.
