Lamb And Broccoli Stir Fry - cooking recipe

Ingredients
    2 tbsp peanut oil
    1 lb lamb loin, trimmed, thinly sliced
    1 None onion, thinly sliced
    2 tsp finely grated ginger
    9 oz Chinese broccoli, chopped
    1/4 cup oyster sauce
    2 tbsp soy sauce
    2 tbsp dry sherry
    2 tsp brown sugar
    None None steamed rice, to serve
Preparation
    Heat 1 tbsp oil in a wok or large frying pan over high heat. Working in batches, stir-fry lamb for 2-3 mins, until browned. Remove from wok and cover to keep warm.
    Add remaining oil to wok. Stir-fry onion and ginger for 2-3 mins, until softened. Add broccoli and cook for 1-2 mins, until just tender. Combine oyster sauce, soy sauce, sherry and sugar then add to pan along with lamb. Cook for 1-2 mins, until heated through. Serve with steamed rice.
