Fried Chicken Sandwich With Mango Salsa And Guacamole - cooking recipe

Ingredients
    1 None ripe mango (about 15 oz), peeled, pitted and cubed
    3 tsp lime juice
    1 None red chili pepper, seeded and chopped finely
    1 pinch brown sugar
    2 None ripe avocados, halved and pitted
    1 clove garlic, peeled and chopped finely
    1 pinch ground cumin
    2 tbsp hot chili paste
    6 tbsp olive oil
    4 None chicken breasts, finely diced
    1 None egg
    3 tbsp breadcrumbs
    4 None oblong buns
    None None arugula for garnish
Preparation
    For the salsa, puree about a third of the mango in a food blender. Mix the puree with 1 tsp lime juice, mango cubes, chilli and sugar. Season to taste.
    For the guacamole, scoop the flesh from the avocado halves and mix with the remaining lime juice, the garlic and the cumin. Season to taste.
    Mix the chili paste, 4 tbsp of oil and a pinch of salt. Combine this with the diced chicken, the egg, and breadcrumbs and season to taste. Form the mixture into 8 flat patties. Heat 2 tbsp of oil in a pan. and fry the patties for 3-4 mins each side. Cut the buns in half and spread the bottom halves with arugula, guacamole, patties and mango salsa. Put the top halves of the buns on top and serve.
