Grilled Potatoes With Chive Cream - cooking recipe

Ingredients
    4 large baking potatoes
    3/4 cup sour cream
    1 clove garlic, crushed
    1 tbsp freshly squeezed lemon juice
    2 None gherkins, drained and finely chopped
    1/3 cup finely chopped fresh chives
Preparation
    Place the potatoes in a medium saucepan. Cover with cold water and bring to a boil on medium-high heat. Reduce the heat to medium and boil gently for 8 mins. Remove from the heat. Drain and set aside for 15 mins or until cool. Wrap each potato in foil.
    For the chive cream, mix the remaining ingredients in a small bowl. Season to taste with salt and freshly ground black pepper.
    Preheat the grill to medium. Grill the potatoes with the hood closed, turning once or twice, for 10 mins, or until tender when pierced with fork.
    Remove the foil. Cut the potatoes in half and top with chive cream. Serve.
