Potato And Cabbage Soup - cooking recipe

Ingredients
    1 tsp oil
    150 g onions, diced
    2.5 litres vegetable stock
    1 1/2 tsp paprika
    1 tsp cumin
    580 ml sauerkraut, drained and chopped
    1 None bell pepper, diced
    4 stems parsley, chopped + some for garnish
Preparation
    Heat the oil in a large saucepan and saute the onions for a couple of mins. Pour in the stock and spices, bring to a boil and simmer for about 5 mins.
    Add the sauerkraut and potatoes to the pan, simmer for 10-15 minutes, then add the peppers and parsley and continue to simmer for 5-8 minutes. Season to taste with salt and pepper. Garnish with chopped parsley to serve.
