Piri Piri Chicken Sandwich - cooking recipe

Ingredients
    1 lb ground chicken
    1/3 cup fresh bread crumbs
    1/4 cup piri piri sauce
    2 None spring onions, finely chopped
    2 cloves garlic, minced
    2 tbsp vegetable oil
    4 slices Cheddar cheese
    None None Spicy Mayonnaise
    1/3 cup mayonnaise
    2 tsp piri piri sauce
    2 tsp lemon juice
    4 None soft rolls, split
    3.5 oz iceberg lettuce, shredded
    1 None avocado, pitted, peeled, sliced
    2 None tomatoes, sliced
Preparation
    In a bowl, combine ground chicken, bread crumbs, piri piri sauce, onions and garlic. Season. Shape into 4 patties. Chill.
    Heat oil in a large frying pan over medium heat. Cook patties for 4-5 mins per side, until golden and cooked through. Place a slice of cheese on each patty. Cover pan with lid and set aside for 1-2 mins, until cheese melts.
    Meanwhile, to make the spicy mayonnaise, whisk together mayonnaise, piri piri sauce and lemon juice. Season.
    Fill each roll with lettuce, avocado and tomato. Top with patties. Serve with spicy mayonnaise.
