Baked Fish With Chermoula - cooking recipe

Ingredients
    1/2 cup fresh cilantro leaves, chopped
    2 tbsp olive oil
    1 tbsp paprika
    1 tsp ground cumin
    1 None lemon, zested and juiced
    8 (3.5 oz) fish fillets
    7 oz couscous
    None None steamed green beans, to serve
    None None steamed butter beans, to serve
Preparation
    Preheat oven to 350\u00b0F. Line a baking tray with foil.
    In a bowl, combine 1/4 cup cilantro, olive oil, spices and 1/2 of the lemon zest. Pour over fish in a shallow baking dish and set aside to marinate for 10 mins.
    Arrange fish on prepared tray. Bake for 5-7 mins, until cooked through.
    Meanwhile, place couscous and remaining lemon zest in a bowl. Add lemon juice and 1/2 cup boiling water. Cover with plastic wrap and let stand for 5 mins. Fluff with a fork then fold in remaining cilantro. Season to taste.
    Serve couscous with fish and beans.
