Blackberry Omelette - cooking recipe

Ingredients
    2 tbsp icing sugar
    250 g blackberries
    4 None eggs, separated
    2 tbsp whipping cream
    2 tbsp caster sugar
    1/2 tsp ground cinnamon
    15 g butter
Preparation
    Preheat the broiler. Mix the powdered sugar with 1/3 lb blackberries. Set aside.
    Mix the egg yolks, cream and 1 tbsp sugar. Whip the egg whites to stiff peaks then fold into the egg yolk mixture. Melt the butter in a frying pan and add the egg mixture. Cook over low-medium heat for 2-3 mins, until the bottom of the omelette is golden. Place under the broiler until golden brown. Cut in 1/2 and transfer to 2 plates. Place the blackberries on top. Mix the cinnamon and 1 tbsp sugar then sprinkle over the pancakes.
