Coconut Bread Pudding - cooking recipe
Ingredients

2 None eggs
1 tbsp sugar
1/2 tsp coconut extract
1/3 cup heavy cream
1 cup 2% milk
1 slice white bread, crusts removed, cubed
1 tbsp raisins
1 tbsp shredded coconut
Preparation

Preheat oven to 350\u00b0F.
Whisk together eggs, sugar and coconut extract. Gradually whisk in cream and milk. Set aside.
Arrange bread in a baking dish. Sprinkle with raisins then pour custard over top. Place baking dish inside a roasting pan and add enough water to come halfway up the sides of baking dish. Bake for 30 mins. Sprinkle with coconut and bake for another 10 mins, or until pudding is just set. Let stand for 5 mins before serving.
Serve warm or cold.
