Brie And Pepper Muffins - cooking recipe

2 1/2 cups self-rising flour
1/3 cup roasted red peppers, drained and diced
1/3 cup pine nuts
1 tbsp chopped fresh parsley
2/3 cup milk
8 tbsp (1 stick) butter, melted
1 None egg, lightly beaten
2 oz brie, cut into 12 cubes
Preparation

Preheat the oven to 350\u00b0F. Lightly grease a 12-cup muffin pan.
Sift flour into a large bowl. Stir in peppers, pine nuts and parsley. Whisk milk, butter and egg in a medium bowl. Season to taste. Add to the flour mixture and stir until blended. Do not over-mix. Spoon into muffin pan, filling each cup 1/2 full. Top each with a cube of brie. Cover evenly with remaining batter.
Bake for 20-25 mins, until a toothpick inserted into the center comes out clean. Cool on a wire rack.
