Chocolate-Dipped Strawberry Trifle - cooking recipe

1 tub (8 oz) mascarpone cheese
2 None egg yolks
1/4 cup sugar
3/4 cup heavy cream, whipped
1 None orange, peel grated
7 oz bittersweet chocolate (70% cocoa)
1 pint strawberries, hulled and quartered (leave 4 quarters with the hull on, to garnish)
5 oz ladyfingers or sponge cake cut into fingers shapes
1/2 cup limoncello
2 tbsp chopped pistachios
4 None biscotti
Preparation

Beat mascarpone, egg yolks and sugar in a large bowl with an electric mixer for 1-2 mins. Fold in the whipped cream and orange peel. Cover; refrigerate until chilled.
Line a tray with plastic wrap. Place the chocolate in a metal bowl over a saucepan of simmering water. Stir until the chocolate melts. Dip the strawberries halfway into melted chocolate; hold for 20 seconds to let chocolate set before placing on the tray. Refrigerate for 20 mins until chocolate is firm.
To assemble, place 1 tbsp of mascarpone cream into each serving glass. Arrange ladyfingers on the cream and drizzle with half the limoncello. Top with chocolate-dipped strawberries and the remaining mascarpone cream. Drizzle with remaining limoncello. Sprinkle with chopped pistachios. Add a strawberry garnish and biscotti.
