Baked Macaroni And Cheese With Chicken - cooking recipe

1 tbsp olive oil
1 can (11 oz) corn kernels, drained
4 oz mushrooms, sliced
1 None red pepper, seeded and chopped
4 tbsp (1/2 stick) butter
1/4 cup flour
2 1/2 cups milk
1 cup grated Cheddar cheese
1/2 cup grated Parmesan cheese
9 oz fusilli pasta, cooked, drained and kept hot
1 small rotisserie chicken, skin removed, flesh shredded
1/2 cup frozen peas, optional
1 cup fresh breadcrumbs
2 tbsp chopped parsley
None None Salad or steamed vegetables, to serve, if desired
Preparation

Preheat the oven to 350\u00b0F.
Heat oil in a large saucepan on medium heat. Saute corn, mushrooms and red pepper tor 2-3 mins. Transfer to a bowl.
Melt butter in same saucepan on medium heat. Stir in flour and cook for 1 min, stirring. Remove from heat and whisk in milk until smooth. Return to heat and cook, stirring, until sauce boils and thickens. Reduce heat to low and simmer for 3 mins. Stir in 1/2 of both cheeses until melted and combined.
Remove from heat and add pasta, chicken and vegetables. Season to taste. Pour into an 8-cup baking dish. Sprinkle with combined remaining cheeses, breadcrumbs and parsley.
Bake for 25-30 mins until golden. Serve with salad or steamed vegetables, if desired.
