Salmon With Salsa Verde - cooking recipe
Ingredients

2 cups loosely packed parsley, finely chopped
1/4 cup coarsely chopped gherkins
2 tbsp baby capers
1 tbsp olive oil
1 None lemon, peel finely grated and 1 tbsp juice
1 clove garlic, finely crushed
4 None salmon fillets
None None Steamed greens, to serve (optional)
Preparation

For the salsa verde, combine parsley, gherkins, capers, oil, lemon peel and juice, and garlic in a medium bowl. Season to taste.
Heat a large nonstick skillet on medium-high heat. Cook salmon, 2-3 mins each side, until cooked to desired doneness. Serve with salsa verde and steamed greens, if desired.
