Stir-Fried Beef And Mixed Mushrooms - cooking recipe

1/4 cup peanut oil
1 3/4 lbs beef sirloin steak, thinly sliced
1 medium onion, thickly sliced
2 cloves garlic, crushed
2 tsp finely grated ginger
4 oz shiitake mushrooms, thinly sliced
5 oz oyster mushrooms, halved
4 oz enoki mushrooms, trimmed
2 None long red chili peppers, thinly sliced
1 lb Chinese egg noodles
6 None green onions, sliced
1/4 cup oyster sauce
1 tbsp kecap manis (or sweet soy sauce)
1 tsp sesame oil
Preparation

Heat half the peanut oil in a wok or large nonstick skillet on high heat. Stir-fry steak, in batches, until browned. Remove from the wok.
Heat remaining oil in wok. Stir-fry onion until softened. Add garlic and ginger, stir-fry until fragrant. Add shiitake and oyster mushrooms; stir-fry until just tender. Add enoki mushrooms and chili peppers; stir-fry until just combined.
Meanwhile, pour boiling water over noodles in large bowl. Stir to separate; drain well.
Return steak to wok with noodles and remaining ingredients; stir-fry until mixture boils and thickens slightly.
