Paprika Chicken With Fragrant Rice - cooking recipe

Ingredients
    4 None chicken drumsticks
    1 tsp paprika
    2 tbsp olive oil
    2/3 cup almonds
    2 None tomatoes, deseeded and chopped
    1 None onion, peeled and chopped
    2 tsp curry powder
    1 tsp cinnamon
    1 clove garlic, chopped
    1/2 lb long-grain rice
    4 oz dried apricots
    None None prepared curry sauce, to serve
Preparation
    Preheat the oven to 400\u00b0F. Season the chicken with the paprika, salt and freshly ground black pepper. Roast for 25-30 mins until cooked through.
    Meanwhile, heat the oil in a saucepan, add the almonds and toast for 2-3 mins until lightly golden. Remove with a slotted spoon and set aside to drain on paper towels.
    For the rice, add the tomatoes, onion, curry powder, cinnamon and garlic to the pan and saute for 1-2 mins. Add the rice and apricots and stir to coat in the oil. Cover with 2 cups water and simmer for 15 mins until the rice is tender. Sprinkle with the almonds and serve with the chicken and curry sauce.
