Irish Stew - cooking recipe

Ingredients
    1 lb mainly waxy potatoes, peeled and halved
    1 lb carrots, peeled and sliced
    1/2 lb leeks, washed and sliced
    1 3/4 lb lean lamb, cubed
    1 bunch thyme, leaves removed
    None None white pepper
Preparation
    Preheat oven to 300\u00b0F. Spread the bottom of a Dutch oven with the potatoes and cover with water. Layer the rest of the ingredients in the pot and season well, adding the thyme throughout. Bake for about 3 hrs, basting regularly. Sprinkle with pepper to finish.
