Chicken And Watercress Salad - cooking recipe
Ingredients

4 tbsp olive oil
12 oz chicken breasts, sliced
3 tbsp honey
3 tsp grainy mustard
3 tbsp white wine vinegar
8.75 oz watercress, tough stalks removed
3 None spring onions, sliced
3 None tomatoes, cut into wedges
2 oz alfalfa sprouts
Preparation

Heat 1 tbsp oil in a frying pan, season chicken then saute for about 5 mins, turning once until cooked through. Mix 2 tbsp honey with 2 tsp mustard and add to pan. Coat chicken then remove from heat and set aside.
Mix remaining honey and mustard with vinegar. Gradually whisk in remaining oil and season to taste. Toss with watercress, spring onions, tomatoes and alfalfa sprouts. Serve with chicken.
