Arugula, Tomato And Rice Salad - cooking recipe

Ingredients
    1 oz brown rice
    2 tbsp olive oil
    2 oz steak, cut into strips
    1 tbsp white wine vinegar
    1 pinch sugar
    2 tsp pine nuts, toasted
    1 1/4 cups arugula
    2 oz tomatoes, chopped
    1/2 oz pitted black olives, sliced
Preparation
    Cook the rice in boiling salted water according to the package instructions. Drain and allow to cool for 15 mins.
    Heat 1 tbsp oil in a pan, season the steak then sear, turning, for 4 mins. Remove from the pan and set aside to rest.
    Place the vinegar and sugar in a bowl and season. Slowly whisk in the remaining oil. Use to dress the rice, pine nuts, arugula, tomatoes, and olives. Top with the steak.
