Lemon Chicken With Asian Greens - cooking recipe

Ingredients
    2 tbsp peanut oil
    1 lb boneless skinless chicken thighs, thinly sliced
    1 stalk (4 inches) fresh lemongrass, finely chopped
    3 cloves garlic, crushed
    1 1/3 lbs gai lan, trimmed and cut into 2-inch lengths
    1 small yellow pepper, thinly sliced
    2 tbsp lemon juice
    2 tbsp light soy sauce
Preparation
    Heat half the oil in a wok on high heat. Stir-fry chicken, in batches, for about 2-3 mins, or until browned. Remove from wok.
    Heat remaining oil in wok. Stir-fry lemongrass and garlic for about 1 min or until fragrant. Add gai lan, pepper, lemon juice and soy sauce; stir-fry for about 2 mins, or until vegetables are tender.
    Return chicken to wok; stir-fry until heated through.
