Ingredients

1/2 cup chopped dried apples
1/2 cup chopped dried apricots
6 tbsp (3/4 stick) butter, softened
1/2 cup sugar
2 None eggs
1/2 cup flaked coconut
1/4 cup golden syrup or molasses
2 cups self-rising flour
1/4 cup milk
Preparation

Preheat the oven to 325\u00b0F. Grease a 9 x 5-inch loaf pan. Line the bottom and sides with parchment paper; grease the paper well.
Combine the apples, apricots and 3/4 cup boiling water in a medium bowl; cool to room temperature.
Beat butter and sugar in a large bowl with an electric mixer until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in the undrained apple mixture, coconut and golden syrup. Stir in half the sifted flour and half the milk, then stir in the remaining flour and milk. Spoon into prepared pan.
Bake for about 1 1/4 hours until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on wire rack.
