Nasi Goreng (Indonesian Fried Rice) - cooking recipe

Ingredients
    1/4 cup peanut oil
    1 lb large shrimp, peeled and deveined, with tails intact
    8 oz boneless skinless chicken thighs, finely chopped
    1 None red onion, cut into wedges
    1 tbsp shrimp paste
    2 None green onions, thinly sliced
    2 cloves garlic, finely chopped
    1 large red chili pepper, seeded and chopped
    3 cups cooked rice
    2 tbsp kecap manis ( thick sweet soy sauce )
    1 tbsp light soy sauce
    4 None eggs
    None None Lime wedges and sliced red chili pepper, to serve
Preparation
    Heat 1 tbsp of the oil in a large wok on high heat. Stir-fry shrimp and chicken 3-4 mins, until just cooked through. Remove from skillet.
    Heat 1/2 of the remaining oil in wok on medium heat. Add onion and shrimp paste and stir-fry 1-2 mins, until fragrant. Add green onion, garlic and chili pepper. Stir-fry a further 1-2 mins.
    Return shrimp and chicken to wok with rice, kecap manis and soy sauce. Stir-fry 3-4 mins, until well combined and heated through.
    Heat remaining oil in skillet on high heat. Fry eggs, sunny side up, 2-3 mins, until slightly crisp and whites are set. Serve nasi goreng topped with an egg. Sprinkle with chili pepper and serve with lime wedges.
