Grilled Lamb And Pepper With Olive Mash - cooking recipe

Ingredients
    2 lbs russet potatoes, peeled and chopped
    1/2 cup sour cream
    3 tbsp butter, chopped
    1/4 cup pitted black olives, coarsely chopped
    1 large red pepper, quartered and seeded
    8 None lamb loin chops
    2 tbsp fresh mint leaves
Preparation
    Boil, steam or microwave the potatoes until tender; drain. Mash with warmed cream and butter in a large bowl until smooth. Season to taste with salt and pepper. Stir in olives; cover to keep warm.
    Meanwhile, cook pepper and lamb under a preheated broiler (or in a grill pan or on the grill) for 10 mins, or until pepper has softened and lamb is cooked to desired doneness.
    Divide lamb among serving plates. Scatter with mint leaves and serve with pepper and olive mash.
