Salmon Salad In Ciabatta Bowl - cooking recipe

Ingredients
    500 g fresh ciabatta
    50 g butter
    4-5 tbsp olive oil
    300 g salmon fillet, diced
    3 tbsp light balsamic vinegar
    1 None small onion, finely diced
    600 g mixed peppers, diced
    250 g cucumber, diced
    150 g radish, diced
    1 None mini Romaine lettuce, sliced
    125 g mayonnaise
    80 g tomato ketchup
    2 tbsp milk
    1 tbsp Worcestershire sauce
    1/2 tsp caster sugar
Preparation
    Heat butter in a wide saucepan, add diced bread and toast for 3-4 mins, turning. Remove from pan and set aside to cool. Add 2 tbsp oil to the frying pan, add salmon and saute for 4-5 mins, turning. Remove from pan and set aside to cool slightly.
    Meanwhile, mix vinegar, onion and remaining oil together and season. Toss with peppers, cucumber, radish, lettuce and salmon then distribute between ciabatta.
    To finish, mix mayonnaise, ketchup, milk, Worcestershire sauce and sugar together and season. Drizzle over sandwiches and sprinkle with croutons. Serve.
