Noodle Frittata - cooking recipe

Ingredients
    1 lb thin Chinese egg noodles
    1 tbsp oil
    1 None red pepper, seeded and finely chopped
    4 None green onions, thinly sliced
    1 cup bean sprouts
    2 tbsp finely chopped fresh cilantro
    8 None eggs
    1 tbsp soy sauce
    None None Hoisin or oyster sauce, salad, to serve
Preparation
    Preheat the grill to high. Cook the noodles according to the package directions; drain well.
    Heat the oil in a nonstick skillet on high heat. Add the pepper and stir-fry for 1-2 mins, until tender. Stir in the noodles, onions, bean sprouts and cilantro.
    Whisk eggs and soy sauce in a medium bowl. Reduce heat to low and pour egg mixture over the noodles. Cook for 8 mins, until almost set.
    Place the pan under the broiler for 5 mins, until set and golden. Serve in wedges with hoisin or oyster sauce and salad.
