Lima Beans With Chorizo - cooking recipe

Ingredients
    1 tbsp oil
    1 None onion, peeled and chopped
    4 cloves garlic, peeled and chopped
    3 x 14 oz cans lima beans, drained and rinsed
    2 x 14 oz cans chopped tomatoes
    1 lb chorizo, sliced
    None None Pinch of sugar
    1 tbsp fresh flat-leaf parsley, finely chopped and some for garnish
Preparation
    Heat the oil in a saucepan and saute the onion and garlic for 3 mins. Add the beans and cook for 2 mins. Stir in the tomatoes and bring to a boil. Add the chorizo and simmer for 6 mins. Season with salt, black pepper and a pinch of sugar. Stir in the parsley and serve garnished with the rest of the parsley.
