Lemon Chicken Burgers With Caramelized Onion - cooking recipe

1 lb ground chicken
1/2 cup fresh breadcrumbs
1 None egg, lightly beaten
1 clove garlic, crushed
1 small onion, finely chopped
1/4 cup chopped cilantro, plus additional leaves, to garnish
1 None lemon, peel finely grated and lemon juiced
1/4 cup olive oil
2 None red onions, thinly sliced
1 tsp sugar
1 None avocado, mashed
1/2 cup Greek-style yoghurt
1 cup mixed salad greens
1 small cucumber, thinly sliced into ribbons
2 None tomatoes, thinly sliced
4 None soft bread rolls, halved, lightly toasted
Preparation

Combine ground chicken, breadcrumbs, egg, garlic, onion, cilantro and lemon peel in large bowl. Season. Using wet hands, shape into 4 patties and place on a tray.
Heat 1 tbsp of the oil in a large skillet on medium heat. Cook burgers for 4-5 mins each side, until browned and cooked through. Cover and keep warm.
Heat remaining 3 tbsp oil in same skillet on medium-low heat. Cook 3/4 of the red onion for 5-8 mins, adding sugar halfway through, stirring, until soft and brown.
Meanwhile, combine avocado, yogurt and lemon juice in a small bowl.
Stack salad greens, most of the caramelized onion, burgers, cucumber and tomato on roll bottoms. Drizzle over avocado mixture. Top with raw onion, additional cilantro and remaining caramelized onion. Season with pepper.
