Pea And Mint Frittatas - cooking recipe
Ingredients

10.5 oz frozen peas, thawed, 1/2 pureed
6 None large eggs
1 cup heavy cream
1/4 cup vegetable oil
3 oz Parmesan cheese, grated
4 None green onions, finely sliced
1/4 cup fresh mint, chopped
9 oz asparagus, cut into 3/4 inch pieces
1/2 cup all-purpose flour
None None beets, cress, chervil and parsley, for garnish
Preparation

Preheat oven to 350\u00b0F. Grease blini or muffin pans.
In a large bowl, combine pureed and whole peas, eggs, cream, oil, Parmesan, green onions, mint and asparagus. Slowly add flour and mix until just combined. Season. Transfer to prepared pans and bake for 20 mins, or until firm and set. Let cool then chill until needed.
Garnish with beets, cress, parsley and chervil.
