Easter Lamb Cookies - cooking recipe

Ingredients
    50 g caster sugar
    100 g butter
    125 g plain flour
    1/2 tsp ground cinnamon
    1 None egg, separated
    18 None almonds
    18 None small cinnamon sticks
    250 g icing sugar, plus extra for dusting
    2 tbsp lemon juice
    None None Chocolate writing icing
Preparation
    Mix sugar, butter, flour, ground cinnamon and egg yolk until smooth. Wrap in plastic wrap and chill for 30 mins.
    Preheat oven to 400\u00b0F. Line a baking sheet with parchment paper. On a lightly floured work surface, roll out dough to about 1/4 inch thick. Cut out 9 - 3 inch discs and place on prepared pan. Roll out dough again and cut out 9 - 1 inch discs. Place on the larger discs as \"heads.\" Press 2 almonds into the side of each head as \"ears\" and add 2 cinnamon sticks as \"legs\". Bake for 8-10 mins, until crisp and golden. Allow to cool.
    To decorate, mix egg white, powdered sugar and lemon juice until smooth. Transfer to a piping bag fitted with a small plain tip. Pipe curls of icing over the larger cookies to look like wool. Draw faces with chocolate writing icing and allow to dry for 1 hour. Dust with powdered sugar.
