Shortbread - cooking recipe

Ingredients
    1 cup butter, chopped, softened
    1/3 cup granulated sugar
    1 cup all-purpose flour + 2 tbsp
    1/2 cup rice flour
    2 tbsp granulated sugar
Preparation
    Preheat oven to 300\u00b0F. Line 2 baking trays with parchment paper.
    Cream butter and sugar until light and fluffy. Sift flour and 1/4 tsp salt together then mix in until well combined. Turn out onto a lightly floured surface and gather dough into a ball. Shape into 2 - 7 inch discs and transfer to prepared trays. Scallop edges and sprinkle sugar over top. Bake for 35-40 mins, or until golden brown. Let cool completely on trays. Break into wedges.
