Chickpea Lentil Salad - cooking recipe
Ingredients

3.5 oz sun-dried tomatoes, drained, coarsely chopped
1/4 cup olive oil
1 tbsp lemon juice
1 x 14 oz can brown lentils, rinsed, drained
1 x 14 oz can chickpeas, rinsed, drained
9 oz chard, trimmed, finely shredded
Preparation

To make a dressing, blend or process 1/4 of the sun-dried tomatoes with oil and lemon juice until mixture forms a smooth paste.
Place lentils, chickpeas, chard, half the dressing and remaining sun-dried tomatoes in a large bowl. Season to taste and toss gently to combine. Serve salad topped with remaining dressing.
