Sticky Date Pudding - cooking recipe

Ingredients
    None None FOR THE STICKY DATE PUDDING
    3/4 cup chopped pitted dates
    1/2 tsp baking soda
    3 tbsp butter, at room temperature
    1 None egg
    1/2 cup self-rising flour
    1/4 cup flour
    None None Whipped cream or ice cream, to serve
    None None FOR THE BUTTERSCOTCH SAUCE
    3/4 cup heavy cream
    1/2 cup packed brown sugar
    1 tsp butter
Preparation
    Preheat the oven to 350\u00b0F. Lightly grease a 1-quart rectangular baking pan. Combine dates and 1/2 cup boiling water in a small bowl. Stir in baking soda. Let stand for 10 mins.
    Beat butter and sugar in a large bowl with an electric mixer until light and creamy. Add egg, beating well. Fold in sifted combined flours, then date mixture. Spoon into prepared pan.
    Bake for 30-35 mins until toothpick inserted into center comes out clean. Cool slightly on a wire rack.
    Meanwhile for the butterscotch sauce, combine all ingredients in a small saucepan on low heat. Stir until sugar dissolves. Bring to a boil on high heat. Reduce heat to low. Simmer for 1-2 mins until thickened slightly.
    Serve warm pudding with butterscotch sauce and whipped cream or ice cream.
