Lemon Shortbread - cooking recipe

4 tbsp (1/2 stick) unsalted butter, softened
4 tbsp (1/2 stick) butter, softened
2 tsp finely grated lemon peel
2 tbsp granulated sugar
1 cup flour
2 tbsp rice flour
1 tbsp demerara sugar
Preparation

Preheat the oven to 325\u00b0F. Grease two baking pans.
Beat butters, lemon peel and granulated sugar in medium bowl with electric mixer until light and fluffy.
Stir in sifted flours in two batches. Turn dough onto floured surface; knead dough for 5 mins.
Roll dough between sheets of parchment paper until 1/4 inch thick. Using 2-inch star-shaped cutter, cut out stars. Place about 2 inches apart on prepared pans. Sprinkle stars with demerara sugar.
Bake about 10 mins. Cool in pan 2 mins. Remove from pan; cool completely on wire rack.
