Grilled Pound Cake With Berries - cooking recipe

8.75 oz strawberries, quartered
1 tbsp orange juice
1/4 cup powdered sugar
8.75 oz ricotta
1 tsp orange zest, finely grated
1 x 8 oz store-bought pound cake, cut into 1 inch slices

Preparation

Place strawberries, juice and 1 tbsp sugar in a small bowl; toss to coat. Cover with plastic wrap and chill for 30 mins or until slightly syrupy. Meanwhile, in a small bowl, mix together ricotta, zest and remaining sugar.
Heat a grill pan over moderate heat. Spray cake with oil. Cook for 1-2 mins each side or until golden brown.
To serve, transfer the cake to plates. Top with ricotta mixture and berries. Drizzle with syrup and serve immediately.
