Rosemary Garlic Roast Beef - cooking recipe
Ingredients

1 (3 lb) beef eye round roast
2 tbsp Tuscan seasoning, such as McCormick
2 cloves garlic, minced
1 1/2 tbsp minced fresh rosemary leaves
1 1/2 tbsp minced fresh thyme leaves
1 tbsp canola oil
1 None small onion, minced
1 tbsp flour
1/2 cup dry vermouth
1 1/2 cups beef broth
Preparation

Combine seasoning, garlic and 1 tbsp of each herb. Coat beef roast with oil and seasoning mix. Wrap in plastic wrap and chill overnight.
Preheat oven to 325\u00b0F. Roast beef for 1 hour 30 mins, or until cooked to your liking. Cover and let rest for 20 mins. Reserve pan juices.
Meanwhile, heat 1 tbsp oil in a small saucepan over medium heat. Cook onion, stirring constantly, for 3 mins, or until tender. Sprinkle with flour and cook for 1 min. Add reserved pan juices, vermouth, broth and remaining herbs. Simmer for 5 mins, or until slightly thickened, whisking occasionally. Season. Serve with beef.
