Chicken Filet With Herb Crust And Cherry Tomatoes - cooking recipe

2 tbsp oil
4 None chicken breasts
1-2 cloves garlic, peeled and chopped finely
1/2 bunch basil, chopped finely
1/2 None ciabatta bread, sliced
4 tbsp olive oil
2 None shallots, peeled, halved and cut into thin strips
1 lb cherry tomatoes
1 1/2 tbsp balsamic vinegar
1/2 cup vegetable stock
1/2 tsp sugar
1 oz Parmesan cheese, shaved
Preparation

Preheat the oven to 400\u00b0F. Heat the oil in a large skillet and fry the chicken over a medium heat for 10-12 mins, turning as necessary. Add the garlic and basil 1-2 minutes before the end of the cooking time and stir.
Drizzle each slice of ciabatta with a few drops of olive oil and put them on a baking sheet lined with parchment paper and bake them for 8-10 mins, until they're golden brown.
Heat 2 tbsp of olive oil in a frying pan and saute the shallots for 2 mins. Add the tomatoes and simmer for about 4 mins. Pour in the vinegar and stock, bring to a boil and simmer for 1-2 mins. Add the sugar and season to taste.
Serve the chicken breasts on plates with the tomatoes, sprinkled with Parmesan and basil, with the ciabatta on the side.
