Fig And Raisin Cupcakes With Cream Cheese Frosting - cooking recipe

Ingredients
    1 cup self-rising flour
    1 cup whole wheat self-rising flour
    1/3 cup sugar
    2 None large eggs + 1 egg white, lightly beaten
    2/3 cup applesauce
    1/4 cup low-fat milk
    1/4 cup light olive oil
    2 oz dried figs, finely chopped
    2 oz raisins
    2 oz light cream cheese
    1 tsp finely grated orange zest
    1/2 cup powdered sugar, sifted
Preparation
    Preheat oven to 350\u00b0F. Line a 12-cup muffin pan with paper liners. For the batter, sift flours and sugar into a medium bowl and make a well in the center. Add egg, applesauce, milk and oil. Using an electric mixer, beat on low speed for 1 min or until smooth. Stir in figs and raisins then spoon batter into prepared pan. Bake for 20-25 mins, until a skewer out clean. Cool in pan.
    For the frosting, mix cream cheese, zest and powdered sugar in a small bowl until well combined. Spread on the cooled cupcakes and serve.
