Chicken, Feta And Prosciutto Sausages - cooking recipe

Ingredients
    4 None potatoes, peeled, cut into 1/3 inch slices
    1 lb lean ground chicken
    2 oz low-fat feta cheese, crumbled
    3 cloves garlic, minced
    1/3 cup fresh parsley, chopped
    1 None lemon, zested
    4 thin slices prosciutto, halved lengthwise
    None None tomato chutney, to serve (optional)
Preparation
    Preheat broiler. Lightly coat a baking tray with oil. Microwave potatoes on HIGH (100%) for 10 mins. Arrange on prepared tray in a single layer. Lightly coat with oil and broil for 5 mins, until golden.
    Meanwhile, combine ground chicken, feta, garlic, parsley and lemon zest. Form into 8 sausage-shaped logs then wrap each with a slice of prosciutto.
    Lightly coat a nonstick frying pan with oil. Cook sausages over medium heat for 5 mins, turning, until golden and cooked through. Serve with potatoes and tomato chutney, if desired.
