Chocolate Cookie Bars - cooking recipe

Ingredients
    8 tbsp (1 stick) unsalted butter, chopped
    1/2 cup firmly packed brown sugar
    2 tbsp unsweetened cocoa powder, sifted
    1/2 cup flaked coconut
    1 None egg, beaten
    8 oz graham crackers, coarsely crushed
    None None FOR THE TOPPING
    2 tbsp unsalted butter
    2 tbsp firmly packed brown sugar
    1 tbsp unsweetened cocoa powder
    1/4 cup heavy cream
    None None Shaved chocolate, to decorate
Preparation
    Line an 8-inch square baking pan with parchment paper. Melt butter and sugar in a medium saucepan on low heat. Remove from heat. Stir in cocoa powder, coconut and egg, mixing well. Stir in graham crackers. Press into prepared pan. Refrigerate for 30 mins.
    For the topping, heat butter and sugar in a saucepan on low heat. Cook, stirring, until sugar has dissolved. Stir in cocoa powder until well combined. Stir in cream. Increase heat to medium. Simmer for 1-2 mins, until mixture has thickened slightly.
    Pour over layer in pan, smoothing top. Sprinkle with chocolate shavings. Refrigerate until firm. Cut into squares.
