Pistachio Pilaf - cooking recipe
Ingredients

2 tbsp butter
1 tbsp oil
1 large onion, chopped
2 cloves garlic, crushed
1/2 tsp ground cinnamon
1/2 tsp red pepper flakes
1 cup basmati rice
1 cup chicken stock
1/2 cup unsalted pistachios, shelled
Preparation

Heat the butter and oil in a saucepan on medium heat. Add the onion and saute for 8-10 mins until tender and golden. Add the garlic, cinnamon and red pepper flakes and stir for 1 min until fragrant.
Meanwhile, place the rice in a sieve and rinse under cold running water until water runs clear. Drain well. Add to the pan, stirring to coat the rice in the oil. Add the stock and water. Bring to a boil. Reduce heat to low; cover and simmer for 10 mins. Remove from heat and let stand for 5 mins. Stir in pistachios and serve.
