Spaghetti With Asparagus And Thyme - cooking recipe

1 lb white or green asparagus, peeled, tough ends trimmed off
3 tbsp olive oil
4 None tomatoes, peeled and finely chopped
2 tbsp chopped fresh thyme
3/4 cup dry white wine
12 oz spaghetti or linguine
1 cup grated Parmesan cheese
2 tbsp butter
Preparation

Bring 1 inch salted water to a boil in a large skillet. Add the asparagus, cover and cook for 4-5 mins until tender. Drain, reserving the cooking water. Cut the asparagus into 2-inch pieces.
Heat the oil in a large saucepan over medium heat, add the asparagus and tomatoes and cook, stirring often, for 2 mins. Add most of the thyme. Stir in the wine and bring to a boil, then reduce heat and simmer until the liquid has almost evaporated.
Meanwhile, cook the spaghetti according to the package directions. Drain well, then stir into the sauce. Season with salt and pepper and thin with the reserved cooking water.
Gradually add the butter and stir until melted. Stir in half the Parmesan. Spoon into serving dishes and sprinkle with the remaining thyme and Parmesan.
