Prawn Toasts - cooking recipe

Ingredients
    24 None small raw prawns, peeled, deveined, tails left intact, butterflied
    7 slices bread, crusts removed from 6 slices and quartered
    3.5 oz royal red prawns
    2 tsp soy sauce
    1 None green onion, chopped finely
    1 tsp fresh ginger, finely grated
    2 None small fresh red chilies, deseeded, finely chopped
    2 tbsp sesame seeds
    None None peanut oil, for deep-frying
    None None plum sauce, for serving (optional)
Preparation
    In a food processor, pulse 1 slice of bread to breadcrumbs. Add royal red prawns and soy sauce. Process until smooth. Add onion, ginger and chilies.
    Spread 1 tsp prawn paste onto each piece of quartered bread and top each with a prawn. Sprinkle with sesame seeds.
    Heat oil and deep-fry prawn toasts, in batches, until lightly browned and cooked through. Drain on paper towels. Serve immediately, with plum sauce, if desired.
