Fluffy Baked Eggs - cooking recipe

Ingredients
    2 tbsp butter
    4 oz ham, cut into strips
    3/4 cup roasted red pepper, sliced
    2 cups baby spinach leaves
    6 None eggs, separated
    1/2 cup heavy cream
    3/4 cup grated Gruyere cheese
    1 tsp Dijon mustard
    None None Crusty bread, to serve
Preparation
    Preheat the oven to 350\u00b0F. Lightly grease 4 gratin dishes or 1 shallow gratin dish. Place on a baking pan.
    Melt butter in a large skillet on medium heat. Saute ham, pepper and spinach for 1-2 mins until spinach wilts. Spoon evenly into ramekins.
    Whisk egg yolks, cream, 1/2 cup of the cheese and Dijon mustard in a large bowl. Season to taste.
    In a separate clean bowl, whisk egg whites until soft peaks form. Fold into egg yolk mixture. Pour evenly into dishes. Sprinkle with remaining 1/4 cup cheese.
    Bake for 10-12 mins until risen and golden. Serve with crusty bread.
