Pork Chops With Arugula Parmesan Mashed Potatoes - cooking recipe

1 3/4 lbs Desiree potatoes, peeled, quartered
3 tbsp butter
3/4 cup milk
2 1/3 cups arugula
1.5 oz Parmesan, grated
1 tsp lemon zest, grated
1 tbsp olive oil
4 None pork chops
None None Tomato chutney, to serve
Preparation

Place potatoes in a large saucepan; cover with water and bring to a boil. Cook for 15 mins, until tender; drain.
Add butter and milk to potatoes and mash well. Add arugula, Parmesan and lemon zest. Season to taste and stir until combined. Set aside and keep warm.
Meanwhile, heat oil in a large frying pan on medium-high. Cook pork chops for 4-5 mins each side, or until cooked as desired.
Serve chops with Parmesan mashed potatoes and tomato chutney.
