Honey Roasted Ribs With Pasta Salad - cooking recipe

2 3/4 lbs pork rib racks, cut into individual ribs
2 tsp paprika
5-6 tbsp vegetable oil
1/3 cup honey
14 oz macaroni
2 cans sweet corn (about 11 oz each), drained
9 oz Gouda cheese, diced
7 oz cooked ham, cut into thin strips
1 jar cucumber pickles (about 24 oz), pickles and liquid
1 1/3 cup mayonnaise
1/2 cup milk
1/2 cup mineral water
None None parsley sprigs, to garnish

Preheat the oven to 400\u00b0F. Place the ribs in a large roasting pan lined with parchment paper. Mix together the paprika, oil and honey and season with salt and freshly ground black pepper. Pour over the ribs, turning to coat. Roast the ribs in the oven for 40-50 mins until tender, turning and basting occasionally.
Meanwhile, cook the macaroni in a large pan of boiling salted water according to the package instructions. Drain well and refresh under cold water. Transfer to a serving bowl and stir in the sweet corn, cheese and ham. Drain the pickles reserving 1/2 cup of the liquid. Thinly slice the pickles and add to the pasta salad.
Mix the pickle liquid with the mayonnaise, milk and mineral water. Season well and whisk together until smooth then pour over the pasta salad and toss well to mix. Serve the ribs and pasta salad garnished with the parsley.
