Pork Chops With Tomato Caper Sauce - cooking recipe

Ingredients
    1/4 cup all purpose flour
    4 None pork cutlets (5 ozeach)
    1 tbsp oil
    1 None shallot, finely chopped
    1 tbsp capers, rinsed
    2 cups cherry tomatoes, halved
    1 None lemon, juice and grated zest
    None None steamed green beans and snap peas, to serve
Preparation
    Place flour in a shallow bowl and season well. Dust cutlets with flour, shaking off any excess. In a large frying pan, heat half the oil on high. Cook cutlets for 3-4 mins each side. Remove from pan and set aside to keep warm.
    In same pan, heat remaining oil on medium. Cook shallot for 3 mins, until soft. Add capers and tomatoes and cook for 2 mins. Add lemon juice and zest and stir for 1 min. Season to taste.
    Serve cutlets with steamed vegetables and spoon over tomato and caper sauce.
