Croque Madame - cooking recipe

Ingredients
    4 tbsp butter or margarine
    1 tbsp flour
    1/3 cup vegetable stock
    1/3 cup milk
    8 slices white bread
    4 slices Emmenthal cheese (or substitute Gruyere or Swiss)
    4 slices cooked ham
    4 None eggs
Preparation
    Melt 1 tbsp of butter in a saucepan, stir in the flour and cook briefly. Pour in the stock and milk, stirring constantly. Bring to a boil and simmer for 3-5 mins. Season to taste.
    Put 1 slice of ham and 1 slice cheese on each of 4 slices of bread. Put the other slices of bread on top. Heat 2 tbsp of butter in batches in a pan and sear each sandwich for 5 mins, turning as necessary.
    In a second pan heat 1 tbsp of butter and fry the eggs. Arrange the toasted sandwiches on plates with some sauce and an egg on each.
