Caramel Cheesecake - cooking recipe

1/2 lb graham crackers
1/2 cup butter, melted
1 lb cream cheese, at room temperature
1/2 cup granulated sugar
1 tsp vanilla extract
4 None eggs
2 cups caramel sauce
Preparation

Preheat oven to 325\u00b0F. Grease an 8 inch springform cake pan. Place on a baking tray. Process graham crackers to fine crumbs. Add butter and process to combine. Press firmly into base of prepared pan. Chill until needed.
Beat cream cheese, sugar and vanilla extract until smooth. Add eggs, 1 at a time, beating well between additions. Transfer 1/2 to prepared pan. Whisk caramel sauce then drizzle 1/2 over cheesecake. Repeat. Swirl caramel through cheesecake. Bake for 1 hour, or until firm. Turn oven off and let cheesecake cool in oven, with door ajar, for 2 hours.
