Sesame Lamb Kebabs With Cauliflower - cooking recipe

Ingredients
    3 tbsp plain yogurt
    1 tsp lemon juice
    1 tsp milk
    1 tsp white balsamic vinegar
    1 clove garlic, minced
    1 tbsp fresh mint leaves, chopped
    3.5 oz spinach
    1 None cauliflower, cut into florets
    1 lb ground lamb
    2 tbsp breadcrumbs
    1 tsp ground cumin
    1 None egg yolk
    2 None red onions, cut into wedges
    1 tbsp oil
    2 tsp sesame seeds
    1 head romaine lettuce, torn into pieces
    None None warmed bread, to serve
Preparation
    Mix together yogurt, lemon juice, milk, vinegar, garlic and mint. Season then transfer to a serving dish. Set aside.
    Place spinach in a saucepan and drizzle with a little water. Cook for 2 mins, or until wilted. Drain and chop. Cook cauliflower in boiling salted water for 3-4 mins, until softened.
    Combine lamb, spinach, breadcrumbs, cumin and egg yolk. Season. Shape into 24 small ovals. Thread 3 meatballs and 2 onion wedges each onto 9 skewers.
    Heat oil in a large frying pan. Sear kebabs for 8 mins, or until cooked through, turning once or twice. Sprinkle with sesame seeds.
    Combine lettuce and cauliflower on serving plates. Arrange skewers on top. Serve with mint dressing and warmed bread.
