Sausage, Homemade Tomato Sauce And Potato Wedges - cooking recipe

150 g potatoes, scrubbed and cut into wedges
2 tsp oil
1 large chicken sausage
1 None onion, peeled and finely chopped
1 None beefsteak tomato, finely chopped
1 tbsp ketchup
Pinch None dried oregano
1 tsp tomato puree
None None curry powder, to serve
None None fresh oregano sprigs, to garnish (optional)
Preparation

Preheat the oven to 400\u00b0F. Place the potato wedges on a baking pan. Drizzle with 2 tsp of the oil and season with salt and freshly ground black pepper; toss to coat. Bake for 25-30 mins, turning occasionally.
Meanwhile, cook the sausage according to the package directions.
Heat the remaining 2 tsp oil in a small saucepan on medium heat. Add the onion, tomato and 5 tbsp water and bring to a boil. Add the ketchup, tomato paste and oregano. Season to taste with salt and freshly ground black pepper. Cook 2 mins longer. Spoon over the sausage. Serve with the potato wedges. Sprinkle with curry powder and garnish oregano sprigs (if using).
