Glazed Pork And Watercess Salad - cooking recipe

Ingredients
    1/3 cup honey
    3 oz tamarind paste
    2 1/2 tbsp fresh ginger, grated
    2 cloves garlic, minced
    2 lb pork fillets
    3.5 oz watercress
    1 None medium red onion, thinly sliced
    2 None cucumbers, deseeded, thinly sliced
    1 None yellow pepper, thinly sliced
    1/2 cup roasted unsalted cashews
    None None salad, to serve
Preparation
    Preheat broiler. Combine honey, tamarind paste, ginger and garlic. Coat pork with 1/3 of mixture in a medium bowl. Grill pork until browned all over and cooked to your liking. Cover and let rest for 10 mins. Slice thickly.
    Meanwhile, combine remaining ingredients with 1/2 the remaining honey mixture in a medium bowl. Drizzle pork with remaining honey mixture. Serve with salad.
